Avoiding foods

Having a child with Celiac, or any family member really, makes the person in charge of cooking have a big responsibility of making sure to avoid a nice size list of foods.  When you add in other intolerances or allergies, it makes the list longer and a little more complicated.  I finally had the thought that maybe someone besides me might need to know what Sophie is currently not eating, so I figured I'd better make a list.  With the holidays coming up and a new baby in the Spring, it was definitely becoming a necessity to have on hand.  I didn't think it would be that difficult to write down so I grabbed a piece of scratch paper, about 1/4 sheet of printer paper, and began jotting down things.  I quickly filled the paper!  I put it in print to be able to print it out and email it to my family for the holiday cooking coming up next week. It's quite the list!  I thought maybe I'd share with you as well.  I hope to be able to add some things back to her diet eventually, such as the fruit we've cut and nut products.  As of right now, though, this is working on making her stomach good so we are sticking with this for at least the present time.  Here's the list of what we're avoiding for her right now:

We are also still avoiding dairy as she doesn't seem to like it so I can't seem to tell if she's ok with it or not.  I think it's just a preference thing, but I avoid most forms of dairy still.  In case you're wondering what she CAN eat, it's mostly meats I prepare, fruits and vegetables she'll actually eat (which isn't many), rice and rice products, and the few potato items she'll eat (which again is not many).  It's quite the challenge but I will be attempting some new ingredients to make more items and bake more items.  I also always am looking for new recipes that I can modify.  I'm finally getting better at modifying them!

I do hope that YOU are able to eat a variety of foods and that you never have to encounter making such a list for you or your family.  If you do, though, realize that you're not alone!  That is probably the most comforting thing to me.
