Homemade Gluten-free French Fried Onions
Recipe from Gluten Free Mommy, which can be seen HERE. I have added my suggestions and more of what I did in as well.
Ingredients:
- 2-3 big sweet onions (I did 3 and had a ton! Recommend only 2 medium ones.)
- Milk for soaking onions (Depends on your bowl, but I used about 1/2-3/4 cup of Rice Milk.)
- 1 1/2 - 2 teaspoons salt (I didn't measure, but guess about a 1/2 tablespoon since she says she added more.)
- Pepper (Again, didn't measure, but probably about as much as the salt. These will be to your tastes.)
- Gluten-free flour (She suggested a few, but I just used a gluten-free flour already mixed I picked up at HEB. Check her recipe if you want to mix your own. She only has about 1.5 cups, but I needed much more, about 2.5 cups with my 3 large onions.)
- Oil for frying (I used 100% Canola Oil.)
- Mix your flour, salt, and pepper in a plastic bag. (It makes it easier to coat the onions, plus it's less clean-up!)
- Slice the onions and separate the rings. I used every bit of onion I cut, even the many small pieces that were no longer rings. :)
- Heat oil in a large frying pan. Oil should be about an inch deep. When the oil is hot enough, a flick of water will make the oil sizzle.
- Soak the onions in milk. Do in small batches at a time since you won't be frying them all at once.
- Put the onions in the bag and coat with flour. Give them a good coating of flour.
- Place the onions into the hot oil. Watch for splashing! Once they start to turn golden brown, flip them so the other side can also cook well. Once they are no longer soft (which you can tell with your cooking utensil) then they are done. They should be a nice golden brown.
- Put the cooked onions onto paper towels to cool and drain some oil.
- Store them in an air tight container until ready to use, use them right away, or if you're like me snack on some! They were delicious!
Onion Chicken
I believe this recipe was from the french fried onion container. I've been making it a few years now because I love the simplicity of it. Plus, it's delicious!
Ingredients:
- Boneless Skinless Chicken breasts (I use these since they cook faster, but you can use whatever you'd like and just adjust the time accordingly.)
- 1 egg, scrambled
- French Fried Onions, crushed up (The amount will vary according to the size and number of your chicken but roughly about 1/2-3/4 cup for 2-3 chicken breasts. We like extra on top so we use a little more for that.)
- Preheat oven to 400 degrees.
- Dip chicken into egg.
- Coat chicken in french fried onions.
- Place chicken on greased cookie sheet or other oven-safe cooking dish.
- Sprinkle extra onions on top of chicken.
- Cook for about 20 minutes until chicken is done.
- Enjoy!
